Oatmeal & Buttermilk Pancakes // Experiments in the Kitchen

Happy first day of fall! I know I have been absent for a while. Oops, life got a little insane. But...I AM BACK NOW! To kick off the start of my favorite season I made pancakes & caramelized apples! I also think that these pancakes would be killer if they had pumpkin in them.
OATMEAL & BUTTERMILK PANCAKES
1 cup thick rolled oats
1 cup all-purpose flour
1/2 cup whole wheat flour (I substituted spelt flour)
2 1/2 teaspoons backing powder
pinch of salt
2 tablespoons brown sugar
2 large eggs
2 cups buttermilk
5 tablespoons melted butter
In a large mixing bowl, add all of the dry ingredients. Mix well. In another bowl, beat the eggs & add the buttermilk & melted butter. Combine the wet and dry ingredients & mix well. Let the batter rest while you heat the griddle (Still not sure what exactly to heat the griddle to, I kept having to change it back and forth the whole time I was making them). Use butter to keep the pancakes from sticking to the griddle. Use a 1/3c. to pour the batter onto the griddle to make awesome pancakes. Once they start to bubble flip 'em over and let cook till done.
I also made caramelized apples to put on the pancakes. They tasted delicious, almost like a grown up version of a fruit rollup. Super easy to make.
Thinly slice a cored apple. In a bowl add around 5 tablespoons of white sugar. Stick one side of the sliced apple into the bowl and cover only one side with the sugar & place on cookie sheet. Repeat until they are all sugarfied. Turn your broiler on low and pop in the oven. It took mine around 5-7 minutes for them to get nice and caramelized. (I did burn mine because I got a little distracted doing something else, but they still tasted good) After the sugar is nice and golden brown, take out of the over & sprinkle on cinnamon & a little honey!
